The focus was laid upon 3 things that evening:
THINK GLOBAL. EAT LOCAL
The very talented and our very own Sous Chef, Nigel Wooding with his creative flair put together a special Earth Hour menu (See copy below). This menu was inspired from creations of the world that promoted the ‘global’ term using the local ingredients to its fullest thus complimenting towards our motto of thinking global and eating local. The entire kitchen team performed with sheer excellence in minimal lighting and lived up to the quality standards of the Starwood brand.

GO ORGANIC
Special tent cards were created to be placed on each table informing guests about the significance of Earth Hour and promoting the special drinks created for that evening (See copy below). For the restaurant guests to support the organic nature of ingredients, we offered the ‘Bonterra Cabernet Sauvignon’ that gets its flavour from organic vineyards. The organic grapes not only make the wine taste better but also support the organic agriculture which is one of the best means of creating sustainable social and economic upliftment.
To further add to their options, we also carried the ‘Mill Street Organic Lager’ that is made with imported organic New Zealand Hallertau Hops and Breiss Organics 2-Row Brewers Malt to create a uniquely refreshing lager with a distinct European flavour. It was a perfect complement to our guest’s healthy lifestyle and exceptional taste.

GO GREEN
We chose the ‘Go Green’ motto to celebrate the colour of nature and environment. To promote this action, we introduced 2 special cocktails namely the ‘Alien Secretion’ (melon liqueur, pineapple juice, rum) and ‘Cold Shower’ (green crème de menthe, club soda). Both drinks were welcomed with open arms by our guests making it a frequent choice of the evening to raise a toast towards this legendary hour.

An evening at the Sheraton Toronto Airport Hotel & Conference Centre

Sheraton Toronto Airport Hotel & Conference Centre, has been a property that has always taken a stand towards environmental sustainability. This year in 2011, OLIO- A Mediterranean Grille ‘wowed’ its patrons by continuing service while in the dark for the entire duration of the evening. It acted upon ‘Go Beyond the Earth Hour’ in the true sense and switched off the restaurant lights not only for the mere one hour but for the complete dinner service during that evening. The use of green scented candles was made to replace the electronic brightness with natural luminosity. With the exception of a few dimmed chandeliers only to provide the bare minimum light for safety purposes; all other lights were turned off to maximize its contribution towards this cause.
